Hanshan Normal University, a long-established higher educational institution in Guangdong Province, is located in Chaozhou, a national historical and cultural city known as “the Hometown of Chaozhou Cuisine”. The School of Chaozhou Culinary Arts provides the only applied program in the country for Chaozhou local gastronomy. Since the establishment of the major, based on the eastern region of the province, it has made full use of its virtues and features to enhance teaching and research simultaneously and promote the former with the latter. Also, it has actively engaged in cooperation with enterprises, integrating industry, school and research. It can be said that the School has taken an active part in inheriting the culture and skills of local cuisine, improving the service industry and local economy, promoting the city’s cuisine training program and revitalizing the rural areas.
1.School faculty
The School has a teaching staff of fifteen, among whom one is a full professor, three are associate professors and 50% of full-time teachers have doctoral and master’s degrees. Some of them are outstanding teachers at provincial or other levels and online teaching award winners. The others are competent to handle both lectures and practice courses with relevant certificates or titles, including National Level-one Corporate Trainer, National Culinary Master, Provincial Culinary Master, Inheritor of Chaozhou Cuisine, Arts and Crafts Master, and Inheritor of Kung Fu Tea. Besides, the School has invited celebrities in the catering industry as guest professors, such as Li Wenhai, vice president of Charoen Pokphand Group, Yeung Koon Yat, a world-famous Hong Kong chef, and Zhong Chengquan, a household name of Chaozhou gastronomy. Generally speaking, the faculty members, who are young, vigorous and flexible, set an excellent example for the students and work hard in teaching, contributing to the students’ professional competence.
2.Conditions of the School
The School has invested nearly six million yuan in fifteen well-equipped facilities covering a total area of more than 3,000 square meters. They include laboratories for Chaozhou cuisine, western pastries, creative dishes, food presentation, dish quality analysis and multi-functional cooking, practice kitchens for Chinese dishes, pastries and snacks and western dishes, a demonstration room for Chinese and western pastries, workshops of local cuisine maters and bakers, a smart classroom for making online courses, a classroom for tea arts and a room with large-scale valuable equipment.
Also, to meet the needs of practical training, the School has developed partnerships with many high-rating hotels and restaurants like Exhibition International Hotel Dongguan, Pullman Dongguan Forum Hotel, Wanda Vista Dongguan, Guangzhou Jincheng Group, Shenzhenair International Hotel, Lafonte International Hotel, Sheraton Shantou Hotel, Xiamen Airlines Hotel, Nansha Grand Hotel Guangzhou, and Yueda Financial City International Hotel Guangzhou.
